After Easton was born, I was fortunate enough to have plenty of friends who brought us meals. With two boys under two, cooking dinner was just a bridge too far. Fall Harvest Salad
Many people probably think of salads as a traditionally summer dish. I will say that I'm a big fan of salads in the summer. Throwing together fresh summer produce and topping it all with some grilled protein is a win in my book. But fall also has one of my favorite produce items: squash. Apple Cheddar Pop Tarts
I think a lot of us probably have the foods we ate as kids that were a rarity. For me, pop tarts fell into that category. I'm not sure if that's due to their lack of nutritional value or not, but for some reason they weren't a frequent purchase at the grocery store. My favorite flavors were the brown sugar and cinnamon and the classic strawberry. I haven't had a pop tart in years, and now that I know how easy it is to make them at home, I may never go back! Rosemary Dijon Chicken Thighs
I am a huge fan of my cast-iron skillet. I have dreams of someday owning this one, but for now, I'm super happy with my well-loved significantly cheaper one. You can bake cobblers, skillet cookies, and other delicious treats in it. I use it most for dishes that start on the stove and finish in the oven, like this one. Apple Cider Baked Oatmeal
The very first time we took a flight after Lleyton was born, we decided to book a red-eye to Chicago. Some kids do really well on red-eye flights and sleep the entire time. Our then 6-month-old was not one of those kids. I didn't get any sleep the entire flight and by the time we got to my parents' house in Chicago around 7am local time, I was exhausted.
