Hot Honey Chicken Bowls

Hot honey chicken bowls with sweet potatoes and broccoli

Hello hello it’s time for hot honey chicken bowls! This easy dinner is a breeze and comes together on two sheet pans and is a great meal prep lunch option. A great mix of protein, carbs, and veggies for a well-rounded meal that’s also budget friendly. The chicken thighs are juicy, the broccoli crisp tender and just a little charred, and the sweet potatoes perfectly browned. Another thing I like about this recipe is that sweet potatoes and broccoli both keep for a little while, especially sweet potatoes. Keep some boneless skinless chicken thighs in your freezer and you can make this easy dinner anytime you need something fast, healthy, and delicious. We also know that food in a bowl is just better! Cozy up on the couch and you can get a little bit of everything in each bite. I love a food in a bowl option like my gochujang salmon bowls or chicken gyro bowls.

Ingredients for Hot Honey Chicken Bowls

  • Sweet potatoes
  • Boneless skinless chicken thighs
  • Broccoli
  • Bacon
  • Seasonings: salt, pepper, garlic powder, onion powder, smoked paprika, and brown sugar
  • Olive oil
  • Hot honey or regular honey
  • Red pepper flakes (optional)

How to Make Hot Honey Chicken Bowls

  • Peel and chop the sweet potatoes and place them on a sheet pan.
  • Pat the chicken thighs dry with a paper towel and spread on another sheet pan. Sometimes when you buy chicken thighs they are folded up, so be sure to unroll them so they are flat. Chop the bacon and add to the same pan as the chicken.
  • Chop the broccoli and place in a bowl and set aside for now.
  • Drizzle everything with olive oil and use your hands to toss to coat. Mix together all the seasonings and sprinkle a little bit over everything. Use your hands to toss to coat. Get everything covered! If you don’t have enough seasoning, focus on the chicken and sweet potatoes and just use salt and pepper for the broccoli.
  • Place the sweet potatoes and the chicken in the oven. After 20 minutes, toss the sweet potatoes and add the broccoli to the pan.
  • The chicken will take about 25 minutes to cook and the veggies will be done about 20 minutes. Assemble your bowls and drizzle with hot honey. Add extra red pepper flakes for extra heat!

Ingredients
  • 3 sweet potatoes

  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • 1 tbsp. brown sugar
Instructions

Yummy! I will be making this. My question is this: is the bacon cooked when you put it on the chicken or raw?

I’m confused about cook time. The chicken will take way less time than the sweet potatoes.. right? Could you clarify the timing for everything?

“Are you hungry? Are you tired? Do you need a jack “Are you hungry? Are you tired? Do you need a jacket, some water?
Of course, I’ll carry everything you’ve collected.
Of course, I’ll sit on the grass.
Do you need a fortress, a fire, something soft to fall onto?
I’ll hold you, hold you together.
Hold you forever.
Will you always reach for my hand the way you do now?
I’ll expand if you need me to. I’ll give if it helps you.
I’ll cross every river and face every storm.
Is that too much? Too little?
Am I guiding you forward or holding you back?

⛰️Squak Mountain 50k ⛰️ Gosh what a DAY! I committ ⛰️Squak Mountain 50k ⛰️ Gosh what a DAY! I committed to pushing myself to the end of my rope and I absolutely did. I made a lofty goal time of 6:40 and finished in 6:33 after going out way too fast the first loop 😂, but what are races for if not to push past the limit? By the last 8 miles I had nothing left in the tank and found a way to dig deep and finish with two of my fastest miles all day. All in all, an effort I’m super proud of and I couldn’t have worked any harder than I did. It was a “full send” kind of day and I am so happy (and totally exhausted).

Thank you for friends who cheered me on near and far, watched kids during some training runs, and of course @kevin_dieterich for your endless support and making sure the whole family was at the finish line. None of this happens without you. 💛

Happy third birthday to our sweet Killian Michael! Happy third birthday to our sweet Killian Michael! For over a month he’s been asking me daily “mommy, when is my birthday?” And today is the day! Killian is a bundle of love with so much personality. Every morning when he wakes up he announces to the family as he comes downstairs “look who’s coming down!” And insists on big hugs from all his siblings before bed. Everyone is as obsessed with him as the day he was born. Killian loves all forms of transportation but his favorites are fire trucks, trains, and garbage trucks. We build train tracks for hours when his siblings are in school! He doesn’t like carbonated beverages because they are “too spicy.” Killian you are sweet and kind and inquisitive and have so much to say which is both hilarious and adorable. Killian, you are such a joy and this whole family loves you to pieces. We can’t wait to celebrate you all day!! Happy birthday boo bear 💙
