I could go on and on about this casserole. I've been making breakfast casserole for years without a recipe. I usually brown some sausage, add in whatever vegetables I have around, mix in enough hash browns until it "looks right" and cover the whole thing with eggs and cheese. But the tater tots in this casserole set it apart. The tater tots make the difference here; little potato bite pillows tucked in with bell peppers and creamy eggs and cheese are genius. I also made sure this ... continue reading...
Cheesy Buffalo Chicken Chowder
Let's just all go ahead and agree that this chowder combines some of the best things in life. Buffalo sauce and cheddar cheese. It seems natural that these flavors belong together in a chowder. Add chicken, potatoes, and sweet corn and you have a match made in heaven. I'm not a huge fan of any food that's too spicy, and I've never been someone who drizzles hot sauce on my food, BUT I make a huge exception for buffalo sauce. I absolutely love wings (dipped in ranch, of course), and there's a ... continue reading...
Creamy Sundried Tomato and Spinach Pasta
Spring is coming! This past weekend it was almost 70 degrees outside and there wasn't a cloud in the sky. We spent Saturday at Alki Beach in Seattle and the boys loved watching the waves and playing in the sand. We enjoyed lunch at Spud Fish & Chips, which is a Seattle landmark and it was such a great day. Instant Pot Sweet Potato Black Bean Chili
Guess what?! This is my first Instant Pot recipe for you! If you don't have one, don't worry! It can easily be made on the stovetop or in a Crock Pot. I bought my Instant Pot on Black Friday, which is definitely the best time to buy it if you're in the market for one. Then it sat in my cabinet for over a month because using a pressure cooker made me nervous. I know I'm being a little ridiculous because electric pressure cookers are so easy to use, but it took me some time to build up the courage ... continue reading...
Shrimp Tacos with Sriracha Mayo
Tacos for everyone! I think tacos have got to be one of the most delicious, fastest dinners. There are plenty of taco recipes with a filling that's prepared in the crock pot for easy meal prep. But even if you have to brown some ground beef or turkey, use cooked shrimp like in this recipe, or make my vegan Portobello Black Bean Tacos, chances are dinner will be on the table in about 20 minutes. We recently had some friends over for dinner that have two young girls about the same ages as ... continue reading...
