Who doesn't love chicken soup? Especially during this time of year, everyone loves chicken noodle soup. A few weeks ago, the whole family was out for the count with a cold. Everyone was congested and sniffling and I knew I needed something to make us all feel better. For Kevin and I, the spice in this Thai chicken and orzo soup was helpful with clearing our sinuses. For the kids, I simply set some aside before adding the heat so that they could enjoy some too. After having this soup, I ... continue reading...
Sweet Potato Banana Muffins
If you've been following my blog for the past few months, you know that I love a good muffin recipe. My kids are ready for breakfast approximately two minutes after waking up, and I find that it's easiest to have their breakfast ready. While they love oatmeal and scrambled eggs, I also keep homemade pancakes and waffles in the freezer and whip up naturally-sweetened muffins frequently to make sure breakfast is always ready to go. I remember the first time that I went to Pike Place Market, I was amazed by the sea scallops for sale that were the size of a fist. For those of you who haven't been to Seattle, Pike Place Market is like the ultimate ... continue reading...
Swiss Chard, Bacon, and Pumpkin Mac and Cheese

For me it may even top the list of all comfort foods and I have some other favorites I love, like chicken pot pie and grilled cheese and tomato soup. During the holiday season where comfort food is king (looking at you mashed potatoes), it makes sense that mac and cheese is on a lot of your Thanksgiving tables! This Swiss chard, bacon, and pumpkin twist on the classic recipe is perfect for fall. The pumpkin flavor is very subtle, so even if you ... continue reading...
