Happy Valentine's Day! I hope you have something fun planned. Our tradition is to get take-out sushi and enjoy it on the couch, a tradition we started when Lleyton was just 5 weeks old his first Valentine's Day. Before having kids, Kevin and I only had one Valentine's Day together since we started dating. Either he was deployed, or I was deployed. We did enjoy one Valentine's Day together before Lleyton was born; it involved a failed trip to Bend, Oregon due to snow and an impromptu night spent ... continue reading...
Maraschino Cherry Chocolate Chip Brownies
A few months ago, I was brainstorming a brownie recipe to put on the blog. I tried different ingredients to "improve" upon classic brownies. I added a little baking powder or soda to see if I could make them fluffier, I added too much flour, reduced the butter and chocolate, and so many other brownie mistakes. Needless to say, they didn't turn out. They weren't inedible, but were more like a sad, flat chocolate cake. No one needs that. Consequently, I took a brownie hiatus. But I have ... continue reading...
Spicy Sweet Potato Peanut Soup with Kale Pesto
I get it, this recipe has a long title. I actually wanted to call it Spicy Sweet Potato Peanut Soup with Kale PUMPKIN SEED Pesto, but decided that was two words too long. But take note! But you know I love pesto! Check out this shrimp pesto pasta recipe for my "poor man's pesto," which uses almonds instead of pine ... continue reading...

As long as you aren't loading them with cheese, unhealthy dressings, etc., they're generally going to be a healthy lunch or dinner option for you. I try to make a big salad for dinner at least once a week. Usually there's enough leftovers for either Kevin and I to have for lunch, it's super easy to make in advance, and takes very little time. Like a lot of things though, I sometimes find myself getting ... continue reading...
BBQ Shrimp and Grits
Before meeting Kevin, I had never been to the south. I had never had grits, or Chick-fil-A, or true southern BBQ. While my relationship with Chick-fil-A was love at first bite, it took me some time to come around to grits. I didn't understand the concept. To me, they seemed similar to cream of wheat, but I couldn't wrap my hand around eating this creamy mush as a savory dish. Loaded with bacon and cheese? I didn't get it. But I have seen the light. I love grits. And shrimp and grits have ... continue reading...
