I could go on and on about how much I love this shredded buffalo chicken. We stuffed it into baked potatoes, but you can definitely put in sliders, wraps, or use it as a salad or grain bowl topping. Just four ingredients, a few minutes of prep time, and 20 minutes of hands-off time in the Instant Pot until you have dinner! And if you don't have an Instant Pot, keep reading. I'm going to give you some Crock Pot instructions too. This is the second recipe that I'm giving to you for the ... continue reading...
Italian Easter Bread
I am so excited about this recipe! A dear friend shared this recipe with me a few weeks ago (so full disclosure, I did NOT create this recipe myself) and I knew it was something special. This Italian Easter bread recipe has been passed down in her family for generations and I'm honored that she wanted to share it with me to create for all of you. When my friend Gina sent me the picture of this recipe, you could just picture an Italian grandmother in the kitchen making notes for her own ... continue reading...
Edamame and Feta Pasta Salad
Pasta salad is seriously underrated in my book. I think it's the perfect side dish to just about anything, and the Italian chopped salad on this blog is one of my favorite summer recipes. I usually brown some sausage, add in whatever vegetables I have around, mix in enough hash browns until it "looks right" and cover the whole thing with eggs and cheese. But the tater tots in this casserole set it apart. The tater tots make the difference here; little potato bite pillows tucked in with bell peppers and creamy eggs and cheese are genius. I also made sure this ... continue reading...
Cheesy Buffalo Chicken Chowder
Let's just all go ahead and agree that this chowder combines some of the best things in life. Buffalo sauce and cheddar cheese. It seems natural that these flavors belong together in a chowder. Add chicken, potatoes, and sweet corn and you have a match made in heaven. I'm not a huge fan of any food that's too spicy, and I've never been someone who drizzles hot sauce on my food, BUT I make a huge exception for buffalo sauce. I absolutely love wings (dipped in ranch, of course), and there's a ... continue reading...
