Everyone loves a tortilla soup. Literally everyone. They’re smoky and spicy and this one is packed with good-for-you ingredients like bell peppers, sweet potatoes, and quinoa. Smoked paprika, cumin, and cayenne pepper pack it with flavor, and topping it with fresh avocado, cilantro, and crispy tortilla strips makes this your favorite meal to enjoy on Meatless Monday.
Also, cheers to making it through January! It felt like a long month to me, but truthfully I can’t complain given the weather people have had across the country. Our days were in the 40’s and plenty of them were full of sunshine. I have my eyes set on spring and summer, but until then I’m enjoying cozy bowls of soup like this one!
Healthy, delicious, full of flavor, and super easy. What more could you want in a meal? Also, don’t skimp on those tortilla strips. Taking the extra step to fry some fresh tortillas makes all the difference in this soup!
- 2 tbsp. olive oil
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 jalapeno, diced
- 1 can corn, drained
- 1 can fire-roasted tomatoes
- 1 large sweet potato, peeled and chopped
- 6 cups vegetable broth
- 1-2 tsp. salt
- ¼ tsp. ground black pepper
- ½ tbsp. cumin
- 3 tsp. smoked paprika
- ½ tsp. chili powder
- ¾ cup dry quinoa
- 3 tbsp. chopped fresh cilantro + more for topping
- 6 flour tortillas, cut into strips (mine are about ¼ inch wide adn 3 inches long)
- Vegetable or canola oil for frying
- Heat olive oil in a large pot. Add onion, garlic, bell pepper, and jalapeno and cook until tender.
- Add corn, tomatoes, sweet potato, broth, salt, ground pepper, cumin, paprika, and chili powder. Simmer until sweet potatoes are tender, about 20 minutes.
- Add quinoa and cook an additional 10 minutes. Stir in cilantro before serving.
- Heat oil in a large skillet. Add tortilla strips in batches, cooking for 3-5 minutes until golden brown. Transfer to a plate lined with paper towels to cool.
- Serve topped with additional cilantro, tortilla strips, avocado, or sour cream (if not vegan).
