Sweet Potato Quinoa Tortilla Soup

Ingredients
  • 2 tbsp. olive oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 jalapeno, diced
  • 1 can corn, drained
  • 1 can fire-roasted tomatoes
  • 1 large sweet potato, peeled and chopped
  • 6 cups vegetable broth
  • 1-2 tsp. salt
  • ¼ tsp. ground black pepper
  • ½ tbsp. cumin
  • 3 tsp. smoked paprika
  • ½ tsp. chili powder
  • ¾ cup dry quinoa
  • 3 tbsp. chopped fresh cilantro + more for topping
  • 6 flour tortillas, cut into strips (mine are about ¼ inch wide adn 3 inches long)
  • Vegetable or canola oil for frying
Instructions
  1. Heat olive oil in a large pot. Add onion, garlic, bell pepper, and jalapeno and cook until tender.
  2. Add corn, tomatoes, sweet potato, broth, salt, ground pepper, cumin, paprika, and chili powder. Simmer until sweet potatoes are tender, about 20 minutes.
  3. Add quinoa and cook an additional 10 minutes. Stir in cilantro before serving.
  4. Heat oil in a large skillet. Add tortilla strips in batches, cooking for 3-5 minutes until golden brown. Transfer to a plate lined with paper towels to cool.
  5. Serve topped with additional cilantro, tortilla strips, avocado, or sour cream (if not vegan).
