I posted a cocktail recipe here a few weeks ago, and you guys went wild for it! That tells me that you want more cocktail recipes, and I’m here to deliver. These strawberry lavender champagne cocktails give you a taste of summer all year long. You can use fresh or frozen strawberries, so there’s no need to wait for strawberry season, and the hint of lavender takes these cocktails to the next level. They are the prettiest pink color, making them perfect for a bridal shower or a day-of wedding cocktail. Really, this is the drink you want at any party.
Up until photographing this recipe, I didn’t own any champagne flutes. I have no idea why, but I’ve always had champagne in regular wine glasses. But these stemless champagne flutes were such a steal and I’m so happy I have them for anytime that I’m drinking champagne. They are just as elegant as a regular champagne flute but less likely to tip over. I can’t wait to use them more often!
Here in Washington, there is lavender everywhere. People grow it in their front yards and there are an abundance of lavender farms. We even have an annual lavender festival to celebrate all things lavender! But I also understand that not everyone can walk out their front door for fresh lavender. But the good news is that you can buy dried lavender online or in stores! And as a bonus, you can use any extra lavender in some sachets to make your house smell amazing. A friend of mine who owns and operates a lavender farm (I know, dream job), gave me some sachets that smell absolutely incredible.
Whenever you enjoy these strawberry lavender champagne cocktails, it’ll be a good day. They are so refreshing and delicious!
- 1 cup sugar
- 1 cup water
- ¼ cup dried lavender
- 8-10 oz. fresh or frozen strawberries (if frozen, thaw first)
- ¾ cup vodka
- 1 bottle champagne
- In a small saucepan on the stove, bring sugar, water, and lavender to a simmer. Simmer for 20-30 minutes then set aside to cool.
- Place strawberries in a food processor and puree until smooth.
- Once the lavender simple syrup is cooled, strain the liquid into a pitcher. Press the lavender with a spoon to really extract all the lavender juices. Discard leftover lavender once fully strained.
- Next, pour the strawberry puree through a strainer. You can also press the strawberries down in the strainer to ensure all juices are removed.
- Add vodka to pitcher and stir to combine.
- Carefully pour the champagne into the pitcher and slowly stir to combine.
- Serve immediately. You can serve this over ice or by itself.
- Note: If making this in advance, refrigerate the mixture prior to adding champagne. Keep the champagne chilled as well and combine just before serving.
