Strawberry Lavender Champagne Cocktails

Ingredients
  • 1 cup sugar
  • 1 cup water
  • ¼ cup dried lavender
  • 8-10 oz. fresh or frozen strawberries (if frozen, thaw first)
  • ¾ cup vodka
  • 1 bottle champagne
Instructions
  1. In a small saucepan on the stove, bring sugar, water, and lavender to a simmer. Simmer for 20-30 minutes then set aside to cool.
  2. Place strawberries in a food processor and puree until smooth.
  3. Once the lavender simple syrup is cooled, strain the liquid into a pitcher. Press the lavender with a spoon to really extract all the lavender juices. Discard leftover lavender once fully strained.
  4. Next, pour the strawberry puree through a strainer. You can also press the strawberries down in the strainer to ensure all juices are removed.
  5. Add vodka to pitcher and stir to combine.
  6. Carefully pour the champagne into the pitcher and slowly stir to combine.
  7. Serve immediately. You can serve this over ice or by itself.
  8. Note: If making this in advance, refrigerate the mixture prior to adding champagne. Keep the champagne chilled as well and combine just before serving.
