Spinach and artichoke dip is one of my favorite appetizers (isn’t it everyone’s?), and I wanted to combine those flavors and make a crispy flatbread that you can enjoy as a simple meal with a salad or as an appetizer when you entertain! Mission accomplished because this spinach artichoke flatbread is the perfect combination of flavors: a crispy base of your favorite pizza dough topped with a spinach and artichoke mixture that’s heavy on the spinach to make it feel a little healthier. A sprinkle of parmesan is the perfect finale, but I also love to add some extra red pepper flakes and chopped parsley once it comes out of the oven.
For this spinach artichoke flatbread recipe, you can use store-bought or homemade pizza crust. I used store-bought to keep it easy but I plan to use my sourdough starter to make a sourdough crust to try out here! To start the topping for your flatbread, sauté minced onion and finely chopped onion in olive oil. Then, chop a whole bunch of spinach and add it to the skillet. I like to use fresh chopped spinach verses frozen because no matter how much I squeeze the liquid out of thawed spinach I don’t quite get it all out, and we want our crust to stay crispy! Once the spinach is wilted, I add salt, pepper, red pepper flakes, chopped artichoke hearts, and cream cheese. Stir that all together until the cream cheese is melted.
Spread your pizza crust onto a pizza pan and brush with olive oil. Spread the spinach and artichoke mixture onto the crust and top with shredded parmesan cheese. Once it’s done baking, I like to add some extra red pepper flakes and minced parsley on top. You can’t beat this recipe! If I’m serving it as a meal I cut it into triangles, but as an appetizer I cut into rectangular strips. This truly is a recipe you can’t beat, and since we all want to make a meal out of spinach and artichoke dip anyways, now you can!
- 2 tbsp. olive oil, divided
- ⅓ cup finely chopped yellow onion
- 3 cloves garlic, minced
- 6-8 big handfuls of spinach, chopped
- ½ tsp. salt
- ¼ tsp. black pepper
- ¼ tsp. red pepper flakes + more for topping
- 1 cup chopped artichoke hearts*
- 4 oz. cream cheese, softened
- 1 pizza crust (homemade or store-bought)
- ¾ cup grated parmesan cheese
- Fresh parsley for topping, optional
- Preheat oven to 450 degrees Fahrenheit.
- Heat 1 tbsp. olive oil in a skillet. Add onions and garlic and cook until fragrant. Add spinach and cook until wilted.
- Add salt, pepper, red pepper flakes, artichoke hearts, and cream cheese. Stir to combine and cook until cheese is melted.
- Spread your crust onto a pizza pan and brush with the remaining tablespoon of olive oil.
- Top with the spinach and artichoke mixture, then sprinkle with parmesan cheese.
- Bake for 15-20 minutes until crust is golden brown and cheese is melted.
- Top with additional red pepper flakes and finely chopped parsley, if desired.
