Spinach Artichoke Flatbread

Ingredients
  • 2 tbsp. olive oil, divided
  • ⅓ cup finely chopped yellow onion
  • 3 cloves garlic, minced
  • 6-8 big handfuls of spinach, chopped
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • ¼ tsp. red pepper flakes + more for topping
  • 1 cup chopped artichoke hearts*
  • 4 oz. cream cheese, softened
  • 1 pizza crust (homemade or store-bought)
  • ¾ cup grated parmesan cheese
  • Fresh parsley for topping, optional
Instructions
  1. Preheat oven to 450 degrees Fahrenheit.
  2. Heat 1 tbsp. olive oil in a skillet. Add onions and garlic and cook until fragrant. Add spinach and cook until wilted.
  3. Add salt, pepper, red pepper flakes, artichoke hearts, and cream cheese. Stir to combine and cook until cheese is melted.
  4. Spread your crust onto a pizza pan and brush with the remaining tablespoon of olive oil.
  5. Top with the spinach and artichoke mixture, then sprinkle with parmesan cheese.
  6. Bake for 15-20 minutes until crust is golden brown and cheese is melted.
  7. Top with additional red pepper flakes and finely chopped parsley, if desired.
  8. Enjoy!
Notes
* I drain artichoke hearts from a can and then roughly chop them.
