I love having healthy snacks around. Frequently I need a morning snack being almost 22 weeks pregnant, and I always want healthy options for the kids. My kids love granola bars, and of course they love chocolate chips. These peanut butter chocolate chip granola bars are naturally sweetened, gluten-free, and dairy-free. I added flaxseed meal to these bars for an extra healthy boost, and I’ll be making them after this baby is born while I’m nursing and I need snacks at all hours of the day or night.
This is an easy no-bake granola bar recipe because it’s no-bake! If you don’t want to make these into bars, you can also roll them into some delicious energy bites to keep in the refrigerator. Since we have been on quarantine for two months, I’ve been doing a lot of baking and cooking with the kids. Some of their favorites are banana bread, energy bites, granola bars, and chocolate-covered pretzels (with lots of sprinkles of course). They love helping me in the kitchen and we have something healthy to snack on. It’s a win all around!
If you don’t have chocolate chip on hand, these are also really delicious with butterscotch chips or a chopped up chocolate bar. Whatever you have on hand is perfect. If you’re really a peanut butter lover, you can use peanut butter chips in these too! I know that you’re family will be as big of a fan of these peanut butter chocolate chip granola bars as we are.
- ¾ smooth natural peanut butter
- ½ cup honey
- 2 tbsp. coconut oil, melted and cooled
- ½ tsp. salt
- 2¾ cups old-fashioned oats
- 1 tsp. vanilla extract
- ½ tsp. cinnamon
- 3 tbsp. ground flaxseed meal
- ½ cup mini chocolate chips + more for topping
- Spray an 8 x 8 baking dish with nonstick cooking spray and line with parchment paper.
- In a medium bowl, mix together peanut butter, honey, coconut oil, salt, oats, vanilla extract, cinnamon, and flaxseed meal.
- Add chocolate chips and mix to combine.
- Press the granola bar mixture into the prepared pan and add some additional chocolate chips on top.
- Refrigerate for at least 4 hours before removing and cutting into bars.
- Keep any leftover bars refrigerated for up to a week.
