Peanut Butter Chocolate Chip Granola Bars

Ingredients
  • ¾ smooth natural peanut butter
  • ½ cup honey
  • 2 tbsp. coconut oil, melted and cooled
  • ½ tsp. salt
  • 2¾ cups old-fashioned oats
  • 1 tsp. vanilla extract
  • ½ tsp. cinnamon
  • 3 tbsp. ground flaxseed meal
  • ½ cup mini chocolate chips + more for topping
Instructions
  1. Spray an 8 x 8 baking dish with nonstick cooking spray and line with parchment paper.
  2. In a medium bowl, mix together peanut butter, honey, coconut oil, salt, oats, vanilla extract, cinnamon, and flaxseed meal.
  3. Add chocolate chips and mix to combine.
  4. Press the granola bar mixture into the prepared pan and add some additional chocolate chips on top.
  5. Refrigerate for at least 4 hours before removing and cutting into bars.
  6. Keep any leftover bars refrigerated for up to a week.
  7. Enjoy!
