It seems like quite a bit of the country is suffering from a "polar vortex" with temperatures way below zero, cancelled schools, and lots of snow. I grew up in Chicago and went to college in New York, so I am no stranger to the cold, but I'm very thankful that I live in a much more temperate Washington state. Still, a lot of you could probably use a cozy, comforting pasta dish to dig into and this chicken parmesan pasta does not disappoint. Kevin and I met at Fort Leonard Wood, Missouri, ... continue reading...

Chicken Bacon Bruschetta Pasta
If you've been following me for a while, you know that I love a good pasta recipe. Easy to make, easy to sneak in extra veggies, and typically a meal that can be made in one pot. Lleyton has always been a pasta lover, but until recently Easton hated pasta. I'm not sure if it was the texture or the taste, but he would lick the sauce off of the noodles and spit the noodles out. Until he had this chicken bacon bruschetta pasta that is! Now he's a pasta lover like the rest of ... continue reading...
Sausage and Broccoli Pasta
Hello to the easiest ever weeknight pasta! Pasta in general tends to be an easy weeknight meal, but sometimes it just takes a few extra steps than you want to take with chopping onion and mincing garlic. With protein, vegetable, and carbohydrate all coming together in one dish, there's no need for any sides, making this perfect for weeknight meals. ... continue reading...
Edamame and Feta Pasta Salad
Pasta salad is seriously underrated in my book. I think it's the perfect side dish to just about anything, and the Italian chopped salad on this blog is one of my favorite summer recipes. This edamame and feta pasta salad uses the same simple dressing as the Italian chopped salad, but using edamame and feta makes this a different pasta salad altogether. Pasta salad is obviously a go-to side dish, but we actually enjoyed this for dinner! Since pasta salad gets better after a day or so in ... continue reading...
Creamy Sundried Tomato and Spinach Pasta
Spring is coming! This past weekend it was almost 70 degrees outside and there wasn't a cloud in the sky. We spent Saturday at Alki Beach in Seattle and the boys loved watching the waves and playing in the sand. We enjoyed lunch at Spud Fish & Chips, which is a Seattle landmark and it was such a great day. After living in Washington for over 7 years, I've gotten used to the rainy and cloudy winters, but I certainly love when we get a peak of spring because the summers here are so ... continue reading...
