I have long been intrigued by adding a corn casserole to the Thanksgiving table. I love corn on the cob and cornbread, and adding something to highlight corn felt appropriate and Thanksgiving festive. You can never have too many Thanksgiving side dishes, so I decided to make it my mission to create a really delicious take on this classic side dish. To take this recipe to the next level, we’re adding lots of bacon, some diced jalapenos for a little spice, and a healthy amount of cheddar cheese to make this creamy and delicious. Whether you call it corn casserole or corn pudding, this side dish is one that you’ll want to add to your Thanksgiving table this year.
The most time-consuming part of this easy corn casserole recipe is cooking your bacon. Once your bacon is cooked, all the other ingredients are mixed together in one bowl and transferred to a baking dish. I’m using 2 jalapenos (seeds removed) for this recipe and I think that’s the perfect amount of spice for kids and any guests, but if you know you all really love spicy foods you can add another jalapeno. The other ingredients in this recipe are simple: onion, cornmeal, flour, sugar, baking powder, salt, sour cream, melted butter, eggs, corn (both regular canned corn and creamed corn), and cheddar cheese. It’s easy and ready to go as a side dish anytime you need it!
- 10 slices bacon, cooked and crumbled
- ½ onion, finely chopped
- 2 jalapenos, seeds removed, finely chopped
- 1 tsp. garlic powder
- ⅔ cup cornmeal
- ⅔ cup all-purpose flour
- 2 tbsp. granulated sugar
- 1 tbsp. baking powder
- 1 tsp. salt
- 1 cup sour cream
- 4 tbsp. melted butter
- 1 egg
- 1 can corn, drained
- 1 can creamed corn
- 1½ cups shredded cheddar cheese
- Sliced green onion for topping
- Preheat oven to 350 degrees Fahrenheit. Spray a baking dish with nonstick cooking spray and set aside.
- Once your bacon is cooked and crumbled, set a little bit aside for topping the casserole and add the rest of the bacon to a large bowl. Add the remainder of the ingredients to the bowl: onion, jalapenos, garlic powder, cornmeal, flour, sugar, baking powder, salt, sour cream, melted butter, egg, corn, creamed corn, and shredded cheese. Mix well to combine and then transfer to your baking dish.
- Bake for 40-45 minutes until the center is set.
- Top with reserved bacon and chopped green onions.
