Jalapeno Bacon Corn Casserole

Ingredients
  • 10 slices bacon, cooked and crumbled
  • ½ onion, finely chopped
  • 2 jalapenos, seeds removed, finely chopped
  • 1 tsp. garlic powder
  • ⅔ cup cornmeal
  • ⅔ cup all-purpose flour
  • 2 tbsp. granulated sugar
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1 cup sour cream
  • 4 tbsp. melted butter
  • 1 egg
  • 1 can corn, drained
  • 1 can creamed corn
  • 1½ cups shredded cheddar cheese
  • Sliced green onion for topping
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a baking dish with nonstick cooking spray and set aside.
  2. Once your bacon is cooked and crumbled, set a little bit aside for topping the casserole and add the rest of the bacon to a large bowl. Add the remainder of the ingredients to the bowl: onion, jalapenos, garlic powder, cornmeal, flour, sugar, baking powder, salt, sour cream, melted butter, egg, corn, creamed corn, and shredded cheese. Mix well to combine and then transfer to your baking dish.
  3. Bake for 40-45 minutes until the center is set.
  4. Top with reserved bacon and chopped green onions.
  5. Enjoy!
