Instant pots are amazing for a lot of reasons. They make the best hard-boiled (or soft-boiled) eggs, perfectly cooked oatmeal, main dishes, and rice. With minimal prep time, this instant pot Spanish rice is the perfect easy side dish. It’s great to serve alongside enchiladas, perfect for Taco Tuesday, and really amazing tucked into a burrito. Honestly, this Spanish rice would be delicous by itself! Serve it with some black beans, sliced avocado, and some homemade salsa and you’ve got yourself a perfect easy meatless meal.
Most of these ingredients are already in my pantry, which means I can whip up this instant pot Spanish rice anytime. A few minutes to prep, 20 minutes of totally hands-off cooking time, and you have a great side dish. One that can even be amped up to make an easy lunch or dinner. This is definitely a recipe that you’ll want to bookmark, because it is the easiest ever way to make Spanish rice.
If you’ve never tried Spanish rice, this instant pot version is easy and tasty enough that I highly recommend you give it a shot! I’m sure it will be a repeat at your house. It also makes a large batch, perfect to feed a crowd. And since a taco bar is a foolproof way to entertain (who doesn’t love tacos?!), go ahead and add this to your buffet.
- 2 tbsp. olive oil
- 1 red bell pepper, chopped
- ½ yellow onion, chopped
- 1 cup tomato sauce
- Juice of ½ a lemon
- 1 tsp. garlic powder
- 2 tsp. oregano
- 1 tsp. chili powder
- ¼ tsp. ground black pepper
- 2 tsp. cumin
- 1 tsp. smoked paprika
- 1 tsp. salt
- 2 cups brown rice
- 2 cups chicken or vegetable broth
- Set your instant pot to sauté and heat olive oil. Add pepper and onion and cook for a few minutes until tender. Add tomato sauce, lemon juice, garlic powder, oregano, chili powder, black pepper, cumin, smoked paprika, salt, rice, and broth. Give a quick stir to combine.
- Place the lid on the instant pot and seal. Set to high pressure for 22 minutes. Allow to naturally release and sit for 10 minutes before fluffing with a fork and serving.

Smells soooo amazing! 3c of broth seemed like to much . So i set it for another 20 minutes…. it didn’t seem to cook well. 😭
