Instant Pot Spanish Rice

Ingredients
  • 2 tbsp. olive oil
  • 1 red bell pepper, chopped
  • ½ yellow onion, chopped
  • 1 cup tomato sauce
  • Juice of ½ a lemon
  • 1 tsp. garlic powder
  • 2 tsp. oregano
  • 1 tsp. chili powder
  • ¼ tsp. ground black pepper
  • 2 tsp. cumin
  • 1 tsp. smoked paprika
  • 1 tsp. salt
  • 2 cups brown rice
  • 2 cups chicken or vegetable broth
Instructions
  1. Set your instant pot to sauté and heat olive oil. Add pepper and onion and cook for a few minutes until tender. Add tomato sauce, lemon juice, garlic powder, oregano, chili powder, black pepper, cumin, smoked paprika, salt, rice, and broth. Give a quick stir to combine.
  2. Place the lid on the instant pot and seal. Set to high pressure for 22 minutes. Allow to naturally release and sit for 10 minutes before fluffing with a fork and serving.
