Chickpea crunch salad is here for all your summer needs! I can’t think of a summer meal that this wouldn’t go perfectly with. This salad has a little bit of everything in it, tomatoes which just scream summer to me, chickpeas for protein, a simple but flavorful vinaigrette, and cucumbers and radishes for some crunch. Naturally the whole thing is topped with fresh chives and cheese for good measure and a final punch of flavor.
We had this salad for a light spring dinner, but I think it would be great as meal prep for weekday lunches and an amazing side dish for grilled meat. It’s begging to be eaten alongside hamburgers, BBQ chicken, or ribs all summer long. Really, the opportunities are endless. I love having things like this for dinner because it’s an option that’s easy for me to whip up either when the kids are awake because it doesn’t take much time, or during naptime to pop in the refrigerator to really marinate for a few hours before dinner.
Chickpeas have become a staple in my pantry, and while the vegetables in this salad do add a crunch that I love, you can certainly substitute other summer produce and keep the chickpea base with the delicious vinaigrette, chives, and feta. Bell peppers, zucchini, extra tomatoes, or whatever else you have growing in your garden would be great additions.
Whatever you serve this with for dinner, or whether you eat this straight from the bowl for lunch, it’s definitely going to be a salad that you can enjoy all summer long!
- 2 cans of chickpeas, rinsed and drained
- 1 cucumber, peeled, seeds removed, chopped
- 1 bunch of radishes, stems removed and sliced
- 1 large tomato, chopped
- ¼ cup olive oil
- ¼ cup red wine vinegar
- ½ tsp. salt
- 1 tsp. sugar
- ¼ tsp. ground black pepper
- ½ tbsp. oregano
- 1 tbsp. Dijon mustard
- ¼ cup snipped fresh chives
- 4 oz. feta cheese
- In a large bowl, mix chickpeas, cucumber, radishes, and cucumber.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, sugar, pepper, oregano, and Dijon mustard. Pour over chickpea and vegetable mixture and mix to combine.
- Top with chives and feta cheese and toss again to combine.
- Serve immediately. If not enjoying within the next few hours, wait to add cheese until serving.
