I posted a sneak peek of these chickpea cookie dough bites on my Instagram stories and got so many messages asking when the recipe would be here. Well, the wait is over because they are here! Chickpeas are such a versatile ingredient to keep in your pantry, and they are always in my pantry. Crispy chickpeas are perfect on salads, and of course chickpeas can be made into hummus, but did you know that chickpeas are also a great way to make a healthy dessert or snack?
When blended to a creamy consistency with a few other key ingredients like creamy peanut butter, almond flour, honey or maple syrup, and almond and vanilla extracts, chickpeas give you the exact consistency of cookie dough! And thankfully this version is egg-free, gluten-free, dairy-free, and even vegan if you substitute maple syrup for honey. You can serve this chickpea cookie dough as a dip with fruit or graham crackers, but I love to drizzle them in chocolate and keep in the refrigerator for a delicious and healthy treat.
Chickpea cookie dough bites are hands-down my new favorite healthy dessert or anytime treat. They’re easy to make and store really well in the refrigerator for up to a week, although I doubt they will last that long!
- 1 can chickpeas, rinsed and drained
- ⅓ cup natural peanut butter
- 1 tsp. vanilla extract
- 4 tbsp. honey (sub maple syrup if vegan)
- ¼ tsp. salt
- ½ tsp. almond extract
- 4 tbsp. almond flour
- ½ cup mini chocolate chips
- ½ cup chocolate chips
- In a food processor, blend together chickpeas, peanut butter, vanilla extract, honey, salt and almond extract until very smooth. You don't want any chunks of chickpeas! Scrape down the sides of the food processor if needed.
- Add the almond flour and pulse until combined.
- Transfer the mixture to a bowl and mix in mini chocolate chips.
- Line a rimmed baking sheet with parchment paper. Rub oil on your hands and form the chickpea mixture into balls and place on the prepared baking sheet.
- Freeze the cookie dough bites for 20-30 minutes.
- Melt the chocolate chips in a microwave safe bowl, melting in 30 second intervals and stirring after every 30 seconds until melted and smooth.
- Carefully place each cookie dough bite one by one in the melted chocolate and use a spoon to drizzle with chocolate before transferring to the baking sheet.
- Refrigerate until the chocolate is hardened and then enjoy! Cookie dough bites will keep for up to two weeks in airtight container in the refrigerator.
