Chickpea Cookie Dough Bites

Ingredients
  • 1 can chickpeas, rinsed and drained
  • ⅓ cup natural peanut butter
  • 1 tsp. vanilla extract
  • 4 tbsp. honey (sub maple syrup if vegan)
  • ¼ tsp. salt
  • ½ tsp. almond extract
  • 4 tbsp. almond flour
  • ½ cup mini chocolate chips
  • ½ cup chocolate chips
Instructions
  1. In a food processor, blend together chickpeas, peanut butter, vanilla extract, honey, salt and almond extract until very smooth. You don't want any chunks of chickpeas! Scrape down the sides of the food processor if needed.
  2. Add the almond flour and pulse until combined.
  3. Transfer the mixture to a bowl and mix in mini chocolate chips.
  4. Line a rimmed baking sheet with parchment paper. Rub oil on your hands and form the chickpea mixture into balls and place on the prepared baking sheet.
  5. Freeze the cookie dough bites for 20-30 minutes.
  6. Melt the chocolate chips in a microwave safe bowl, melting in 30 second intervals and stirring after every 30 seconds until melted and smooth.
  7. Carefully place each cookie dough bite one by one in the melted chocolate and use a spoon to drizzle with chocolate before transferring to the baking sheet.
  8. Refrigerate until the chocolate is hardened and then enjoy! Cookie dough bites will keep for up to two weeks in airtight container in the refrigerator.
