Chowder may not be the first thing you want to have on a summer day, but when fresh corn is perfectly sweet and delicious in the summer I can't help but use it in a creamy soup like this shrimp and corn chowder. I was inspired by a food blogger who I love to follow, Bev Weidner of Bev Cooks. Bev is an outstanding cook and photographer, mom to an adorable set of boy/girl twins, and all-around funny personality. She lives in Kansas City, but spent an entire month in Connecticut with her family ... continue reading...
Peach Upside-Down Cake
I think pineapple upside-down cake is a dessert that's sometimes forgotten about. It's classic and nostalgic, and every time I taste it I remind myself to make it more often. Peach season is in full swing though, and I wanted to bring you a peach cake that's perfect for summer. Initially I was leaning towards a classic bundt-style cake studded with peaches, but then I had the genius idea to make a peach upside-down cake! The peaches are the perfect pair for the buttery brown sugar glaze ... continue reading...

Turkey Sloppy Joes
I don't know what it is about sloppy joe's, but there's something nostalgic about them. They're probably not a meal that a lot of people think to make often, but I highly encourage you to add these turkey sloppy joe's to your meal plan! They come together in about 20 minutes, and I would even say that they are reasonably healthy! This version is a bit lightened up with ground turkey instead of beef, and uses a lot of ingredients that you likely already have in your pantry or ... continue reading...
Roasted Vegetable Lasagna
Frequently I'm asked where I find inspiration for my recipes and the answer varies. I'm inspired by other food bloggers, food magazines, cooking shows, restaurants, and hearing from those around me about dishes they've loved. A few weeks ago I was talking to my dad and he raved about a lasagna he had eaten recently. It was a vegetarian lasagna packed with vegetables, and instead of a red sauce it used a cream sauce. My dad is quite the cook himself, and as he went on about this roasted vegetable ... continue reading...
