Pork Tenderloin with Apricot Chutney
Pork tenderloin is one of my favorite easy dinner options. With their size, they cook in about 20 minutes and stay juicy and flavorful. Something forgiving and quick like this is perfect for a weeknight but also delicious enough to serve guests. Cucumber, Peach, and Arugula Salad
I love fruit in a salad. Tomatoes may be a natural pair for basil in a caprese salad, but I think peaches pair just as well. I absolutely love fresh basil, and it's subtle sweetness lends itself to be paired with fruit. Potato Salad with Bacon and Mustard
I haven't always been a big fan of potato salad. I don't care for the concept of cooking potatoes and then serving them cold with a mayonnaise-based dressing. I do like my bacon jalapeno gorgonzola potato salad because of all the other add-ins with it! But if I had to choose my favorite option to enjoy potatoes, they would be WARM. Summer Flank Steak
I always get a little nervous when I cook steak. When I'm cooking chicken, pork, or turkey, there's one internal temperature to hit.
