Is it possible to make homemade ice cream with four ingredients and no ice cream mixer. Yes and yes. Honestly, I whipped up this ice cream in about 10 minutes and then stood in my kitchen licking the spoon waiting for it to freeze, which was clearly time well spent. Heavy whipping cream and sweetened condensed milk are the two main ingredients in my homemade ice cream. After that you can customize it however you want! Add different berries, some vanilla extract, whatever feels right. ... continue reading...
Rainbow Chopped Salad
This salad came together in after a highly necessary crisper clean-out. When I go grocery shopping, I have a list and try to stick to it, but in the summer with the abundance of fresh produce I find myself adding lots of extra vegetables to my shopping cart. There are worse problems to have, am I right? But as I looked through the refrigerator prior to going out of town for ten days, I knew I needed to make quick work of using up a lot of ingredients. Thankfully, salads are a trend that ... continue reading...
Parmesan Herb Polenta Bowls
Polenta is something I always keep in my pantry. Grain bowls are popular easy meals right now, and I think we should make polenta bowls a new trend too. Naturally-sweetened and protein-packed thanks to the use of almond butter and Greek yogurt, they're a muffin that will keep you full at breakfast or make a delicious snack to take on the go. Once your bananas are ripe, you just need some pantry staples to make these muffins. Here's what ... continue reading...
Shrimp Pesto Pasta
Pesto is one of those things that makes me feel fancy when I eat it. But it really shouldn't, because homemade pesto is so easy! And this version, which I'm calling "poor man's pesto," uses almonds instead of pine nuts. I almost always have almonds in my pantry but pine nuts usually require a special trip to the store. Plus pine nuts are so expensive! Use almonds in this version and I promise it's just as good. The other great thing about this recipe is how fast it comes together. You can ... continue reading...
