I haven't ever grown rhubarb in my garden, but from those I know who have, it apparently grows like crazy. Strawberry and rhubarb are a common pairing since rhubarb is so tart and strawberries are at their sweetest and juiciest in the summer. But I think rhubarb is great by itself in a cake, galette, or in these muffins. It's a sweet, fluffy batter studded with rhubarb and topped with a streusel topping. What's not to love! Occasionally when I see muffins with a streusel topping, I skip ... continue reading...
Vegan Chocolate Peanut Butter Pie
This pie is so easy it's a little ridiculous. You may be looking at it and think that vegan pie must mean that it tastes like it's missing something. I'll admit, vegan desserts can be a challenge. But one bite of this pie and you'll have no idea that it's completely vegan (as long as you select dairy-free chocolate and use a dairy-free crust). What makes this filling so creamy without using cream? Or pudding? Or eggs? You want to know the secret ingredient? Tofu! All over the internet, ... continue reading...
Herb Shrimp Couscous
Have you seen a trend with a lot of the dinners that I share on here? They are either easy and come together in about 30 minutes, sometimes less, or are made in the Crock Pot or Instant Pot. I was on the crew team for three years at West Point and we drove from New York to Florida every spring break to train, but other than that I hadn't experienced it. Kevin introduced me to quite a few things that I had never had before, Chick-fil-A, grits (which I initially didn't like but now love), really good BBQ, and pimento cheese. I don't know who had the genius idea to take pimentos and cheese and smash them ... continue reading...
Pizza-Stuffed Portobello Mushrooms
Who doesn't love pizza? People love pizza so much that there are creative ways for everyone to enjoy pizza, even those with food intolerances. I can't tell you how many recipes I see on Pinterest for cauliflower or zucchini pizza crusts, and you can even buy pre-made cauliflower crusts at some grocery stores. These pizza-stuffed Portobello mushrooms may not be the same as biting into a gooey, cheesy slice, but they are so easy and packed with pizza flavor. As an added bonus, this dinner ... continue reading...
