I almost always have homemade granola in my pantry. It’s a quick snack, a healthy and filling breakfast, and easy to customize into many different flavor options. Store-bought granola is frequently high in sugar and additives, and those that aren’t are very expensive! It is way cheaper to make granola at home, and it couldn’t be easier. This white chocolate cherry granola feels a little indulgent with the addition of white chocolate chips, but it is absolutely delicious.
There are a few tips to getting a granola that’s delicious and crunchy with huge oat clusters. First, let it cool completely before you break it into pieces. I used to stir my granola a few times while baking and then again after I took it out of the oven, and while the granola was flavorful it didn’t give me any of the big crunchy clusters that I wanted. Letting your granola cool will give you giant crunchy granola clusters! The second tip is to hold off adding any dried fruits or chocolate until after the granola is done baking. Holding off on adding the chocolate may seem obvious, but adding the fruit before baking will cause it to dry out even more or even burn. If I’m making a granola with nuts, I do add those in with the rest of the granola because I like the toasty flavor they get after baking.
White chocolate cherry granola is the perfect breakfast or snack. I like to enjoy it with milk or Greek yogurt, but also find that I snack on it by the handful because it’s so delicious! You can omit the white chocolate or substitute another chocolate chip if you don’t like white chocolate, and even try another type of dried fruit to change up the flavors! I recommend you try the recipe as is first: the white chocolate and cherry combination is simply the best.
- 4 cups old-fashioned rolled oats
- 4 tbsp. ground flaxseed meal
- ½ cup coconut oil, melted and cooled
- ½ cup honey
- ½ tsp. salt
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 1 cup dried cherries
- 1 cup white chocolate chips
- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl, mix together oats and flaxseed meal.
- In a small bowl, whisk together coconut oil, honey, salt, vanilla extract, and cinnamon. Add to the oat mixture and stir until combined. You want all of the oats to be coated!
- Spread the mixture on a rimmed baking sheet and bake for 25-30 minutes until golden brown.
- Let the granola cool completely before breaking into granola clusters. Add dried cherries and chocolate chips and combine.
- Store cooled granola in an airtight bag or container for up to a week.
