In a large bowl, mix together oats and flaxseed meal.
In a small bowl, whisk together coconut oil, honey, salt, vanilla extract, and cinnamon. Add to the oat mixture and stir until combined. You want all of the oats to be coated!
Spread the mixture on a rimmed baking sheet and bake for 25-30 minutes until golden brown.
Let the granola cool completely before breaking into granola clusters. Add dried cherries and chocolate chips and combine.
Store cooled granola in an airtight bag or container for up to a week.
