So, I’m on a bit of a meatball kick lately. A few weeks ago I shared this recipe for turkey meatball curry, and was craving meatballs of a different flavor. I love baked meatballs for a few reasons; they’re reasonably healthy, ready in about 30 minutes, and super easy to meal prep. You can even make a double batch of these spicy teriyaki turkey meatballs to freeze and thaw when you have a busy evening or need a quick lunch.
These meatballs have the best savory and spicy glaze. They are perfect over rice with some roasted vegetables, especially broccoli. Inspired by your favorite takeout, dinner has never been easier or more delicious.
Really you can’t go wrong with these meatballs. Packed with flavor and ready to go in the oven after less than 10 minutes of work. 20 minutes later and these are ready to go, making them great for a weeknight. But their takeout vibe also makes them great to enjoy on the couch on a Saturday night with your latest Netflix binge.
I promise you that you will not be disappointed if you make a double batch and freeze half. Just freeze them unglazed and thaw for a super easy meal!
- 1 lb. ground turkey
- 1 egg
- ¾ cup plain breadcrumbs
- 2 tbsp. olive oil
- ½ tsp. garlic powder
- ½ tsp. onion powder
- ½ tsp. ground dried ginger
- ½ tsp. salt
- ¼ tsp. ground black pepper
- 4 green onions, thinly sliced, plus more for topping if desired
- ¼ cup soy sauce
- 3 tbsp. rice vinegar
- 2 tbsp. brown sugar
- 1 tbsp. garlic chili paste (sambal oelek)
- Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with nonstick cooking spray and spray with nonstick cooking spray.
- In a medium bowl, combine turkey, egg, breadcrumbs, olive oil, garlic powder, ginger. salt, black pepper, and green onions.
- Mix with your hands and form 1½ - 2 inch balls and place on the prepared baking sheet. Bake for 20-22 minutes until done.
- Meanwhile, make the glaze. In a small saucepan combine soy sauce, rice vinegar, brown sugar, and garlic chili paste. Cook over low heat until thickened. Keep an eye on this and stir frequently as it can burn quickly. Remove from heat.
- Brush or drizzle the glaze over the meatballs.
- Serve with rice and roasted vegetables.
