Turkey Teriyaki Meatballs

Ingredients
Meatballs
  • 1 lb. ground turkey
  • 1 egg
  • ¾ cup plain breadcrumbs
  • 2 tbsp. olive oil
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. ground dried ginger
  • ½ tsp. salt
  • ¼ tsp. ground black pepper
  • 4 green onions, thinly sliced, plus more for topping if desired
Glaze
  • ¼ cup soy sauce
  • 3 tbsp. rice vinegar
  • 2 tbsp. brown sugar
  • 1 tbsp. garlic chili paste (sambal oelek)
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with nonstick cooking spray and spray with nonstick cooking spray.
  2. In a medium bowl, combine turkey, egg, breadcrumbs, olive oil, garlic powder, ginger. salt, black pepper, and green onions.
  3. Mix with your hands and form 1½ - 2 inch balls and place on the prepared baking sheet. Bake for 20-22 minutes until done.
  4. Meanwhile, make the glaze. In a small saucepan combine soy sauce, rice vinegar, brown sugar, and garlic chili paste. Cook over low heat until thickened. Keep an eye on this and stir frequently as it can burn quickly. Remove from heat.
  5. Brush or drizzle the glaze over the meatballs.
  6. Serve with rice and roasted vegetables.
