This salad reminds takes me right back to my childhood summers because I think we had this salad just about every night for dinner. Of my three brothers, one didn’t like cucumbers, one didn’t like tomatoes, and maybe one of them didn’t like either, but I could eat second and third helpings of this and would even try to drink the dressing. It’s that good!
It’s so incredibly simple though, and is even better if you make it a few hours in advance to let the vinaigrette really soak into the tomatoes and cucumbers. The chives in my garden basically have their own zip code now and I plan to use them in this salad all summer long.
Shout out to my dad, this is his recipe! He’s a master in the kitchen.
- 2 large or 4 small tomatoes, sliced
- 1 large cucumber, peeled and thinly sliced
- ¼ cup snipped chives*
- 1 cup water
- ¼ cup apple cider vinegar
- 1 tbsp. sugar
- 1 tsp. salt
- ¼ tsp. pepper
- In a small bowl, whisk together water, apple cider vinegar, chives, sugar, salt, and pepper.
- Place tomatoes and cucumbers in a medium bowl.
- Pour dressing over vegetables.
- Can be served immediately, but is even better after allowing to sit in the refrigerator for a few hours, stirred occasionally.

The best tomato cucumber salad I have ever had. I usually find the vinegar overpowering, but this version has an excellent proportion in the dressing. I made mine ahead and let it refrigerate until dinner. Paired well with some spinach stuffed pork chops. Great summer salad that I look forward to making again.
