It may only be Wednesday, but I’m pretty sure we can start making plans for weekend brunch. And what you need are some crispy, slightly spicy potatoes with bacon and perfect jammy eggs. Cook everything in a big skillet while you make the easiest ever soft-boiled eggs in the Instant Pot and these sweet potato jalapeno bacon breakfast potatoes are all yours!
Ok, I know that not everyone has jumped on the Instant Pot bandwagon so you can definitely soft-boil your eggs with your preferred method. But let me tell you, if you find yourself making hard or soft boiled eggs on any sort of regular basis, an Instant Pot is for you. I put my eggs in the steamer basket and add 1 1/2 cups of water. 3 minutes at high pressure will give you the eggs that you see here, and I hard-boil mine for 6 minutes for an extra firm yolk. So easy!
But let’s get back to these potatoes. Crisp up some bacon, let the potatoes become crispy in the same pan, stir in some jalapenos, onions, and spices and brunch is ready to go. I can’t think of anything better to wake up to on a Saturday morning.
- 8 slices bacon, chopped
- 1 large or 2 medium sweet potatoes peeled and chopped
- 2 jalapenos, seeds removed, diced
- ½ yellow onion, chopped
- ½ tsp. salt
- ¼ tsp. freshly ground black pepper
- 1 tsp. cumin
- 1 tsp. smoked paprika
- ½ tsp. garlic powder
- 4 soft-boiled eggs
- In a large skillet, cook the bacon until crispy.
- Remove all but 2 tbsp. of the bacon grease and add the potatoes. Stir occasionally and cook until crispy on all sides and tender.
- Add jalapenos and onion and cook for a few more minutes until the onions are tender.
- Season with salt, pepper, cumin, paprika, and garlic powder and stir to combine.
- Serve topped with soft-boiled eggs.
