It’s possible that we’re eating more pasta than normal right now. Maybe once a week? It’s just so easy to make, easy to customize, and I always have a box in our pantry. These spicy garlic butter noodles are simple. The spicy garlic butter sauce is simple. Toss it with the pasta and then add whatever vegetables you want! I love this with roasted brussels sprouts or a mix of roasted zucchini and mushrooms. It’s a great way to incorporate whatever vegetables you happen to have into a delicious pasta dish.
The sauce for this pasta is simple, just butter, a generous amount of garlic, olive oil, red pepper flakes, salt, and pepper. I wanted to keep this as easy as possible so that you can enjoy these spicy garlic butter noodles no matter what you have on hand. I also kept it vegetarian, but as my husband quickly reminded me, this would be really good with bacon. Add some bacon if you want because I do think that would be delicious!
If you are looking for a pasta with more protein, it’s amazing how many gluten-free options are out there now that are made of chickpeas or lentils. My favorite gluten-free pasta is Banza, which is made from chickpeas, but there are definitely other options out there too. This truly is a pasta for everyone! And you can tailor the amount of red pepper flakes that you use for the amount of heat that you want in your food. Add these spicy garlic butter noodles to your meal plan!
- 1 lb. Brussels sprouts, halved*
- 2 tbsp. olive oil
- 2 tbsp. balsamic vinegar
- ½ tsp salt
- ¼ tsp. freshly ground black pepper
- 1 lb. pasta of choice (I used rotini)
- 4 tbsp. butter
- 3 tbsp. olive oil
- 5-6 cloves garlic, minced
- ½ tsp. salt
- ½ tsp. red pepper flakes
- ½ cup shredded parmesan cheese
- Preheat oven to 350 degrees Fahrenheit. Spread the Brussels sprouts on a rimmed baking sheet. Drizzle with olive oil and balsamic vinegar and sprinkle with salt and pepper. Toss to combine and bake for 30 minutes until tender.
- Meanwhile, bring a large pot of salted water to a boil and cook according to package directions. Drain and set aside.
- In the same pot, melt butter. Add olive oil and garlic and cook until fragrant. Add salt and red pepper flakes and cook for a few more minutes.
- Return pasta to pot and stir to coat noodles with the garlic butter. Add roasted Brussels sprouts and parmesan cheese and stir to combine.
- Serve immediately.
