Spicy Garlic Butter Noodles

Ingredients
Brussels Sprouts
  • 1 lb. Brussels sprouts, halved*
  • 2 tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • ½ tsp salt
  • ¼ tsp. freshly ground black pepper
Pasta
  • 1 lb. pasta of choice (I used rotini)
  • 4 tbsp. butter
  • 3 tbsp. olive oil
  • 5-6 cloves garlic, minced
  • ½ tsp. salt
  • ½ tsp. red pepper flakes
  • ½ cup shredded parmesan cheese
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spread the Brussels sprouts on a rimmed baking sheet. Drizzle with olive oil and balsamic vinegar and sprinkle with salt and pepper. Toss to combine and bake for 30 minutes until tender.
  2. Meanwhile, bring a large pot of salted water to a boil and cook according to package directions. Drain and set aside.
  3. In the same pot, melt butter. Add olive oil and garlic and cook until fragrant. Add salt and red pepper flakes and cook for a few more minutes.
  4. Return pasta to pot and stir to coat noodles with the garlic butter. Add roasted Brussels sprouts and parmesan cheese and stir to combine.
  5. Serve immediately.
  6. Enjoy!
Notes
*I used Brussels sprouts here and they are delicious in this recipe! But you can use whatever vegetables you have on hand and roast them.
