Tacos for everyone! I think tacos have got to be one of the most delicious, fastest dinners. There are plenty of taco recipes with a filling that’s prepared in the crock pot for easy meal prep. But even if you have to brown some ground beef or turkey, use cooked shrimp like in this recipe, or make my vegan Portobello Black Bean Tacos, chances are dinner will be on the table in about 20 minutes.
We recently had some friends over for dinner that have two young girls about the same ages as our boys. With four kids under four running around, I wanted something that required little preparation, was delicious, and was something that everyone could enjoy. I made these slow cooker barbacoa beef tacos and they were a huge hit!
It doesn’t just need to be Taco Tuesday; lets have tacos every day! These tacos have a spicy honey garlic shrimp, a quick zesty slaw that marinate while the shrimp are cooking, and the best Sriracha mayo. Literally this is just Sriracha sauce and mayonnaise but it is such a genius combination that I promise you’ll want to put on everything.
- 1 tbsp. peanut oil
- 1 tsp. sesame oil
- 2 cloves garlic, minced
- 2 inches fresh ginger, grated
- 1 lb. cooked, peeled shrimp (thawed if frozen)
- ½ tsp. salt
- ¼ tsp. pepper
- 1 tbsp. honey
- ¼ head green cabbage, shredded
- ¼ head red cabbage, shedded
- 2 carrots, peeled and julienned or thinly sliced
- ¼ cup apple cider vinegar
- ½ tsp. salt
- ¼ tsp. pepper
- 2 tsp. sugar
- ⅓ cup mayonnaise
- 2 tbsp. Sriracha sauce
- Tortillas, for serving
- Heat peanut oil and sesame oil in a large skillet. Add garlic and ginger and cook until fragrant.
- Pat shrimp dry very well with paper towels and then add to skillet. Add salt, pepper, and honey and cook for 5 minutes until warm.
- While shrimp are cooking, place green cabbage, red cabbage, carrots, apple cider vinegar, salt, pepper, and sugar in a medium bowl and stir to combine.
- In a separate, small bowl, combine mayonnaise and Sriracha sauce.
- Spread tortillas with the Sriracha mayo and top with shrimp and slaw. Serve immedietely.
