Summers are for easy meals. Does 4pm ever roll around and you wonder what you’ll eat for dinner? And if you’ve had a long day and can’t spend more 10 minutes cooking you just pour yourself a bowl of cereal or make a meal of cheese and crackers. No? Just me? Well whether you’ve been there or not, this sheet pan salmon dinner with creamy dill sauce is here for you. Roast the potatoes first, then throw on the broccoli and salmon. The creamy dill sauce comes together in minutes and you can drizzle it over the whole thing for the easiest ever weeknight dinner.
Because this meal has so little hands-on time, it’s perfect for busy evenings or for weekends when you just need a break. You can chop the potatoes and broccoli in advance to make dinnertime even easier. Throw it all on the pan and add the salmon for the last 15 minutes and dinner is served. With how little you have to do to get this ready, you can wrangle your kids or take a minute to breathe before another busy workday. I get it, I’ve been there. I’ve worked full time and been home with kids, and in both situations there were plenty of times when I didn’t want to make dinner.
You really do need to add this salmon to your meal plan. This sheet pan salmon dinner is going to make a frequent appearance in the rotation with how delicious and easy it is!
- 1 - ½ lbs. salmon, cut into fillets
- 3 broccoli crowns, chopped into florets
- 3 large Yukon gold potatoes, chopped into bite-sized pieces
- ¼ cup olive oil
- 2 tsp. salt
- 1 tsp. freshly ground black pepper
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 1 tsp. smoked paprika
- 1 tsp. dried oregano
- ½ cup plain Greek yogurt
- 2 tbsp. fresh dill, finely chopped
- ¼ tsp. salt
- 2 tbsp. milk
- ¼ cup finely grated Parmesan cheese.
- Preheat oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with aluminum foil. Spray with nonstick cooking spray. Spread broccoli and potatoes on the prepared baking sheet and place salmon on a separate plate.
- Drizzle olive oil over broccoli, potatoes, and salmon. Use your hands to make sure that everything is evenly coated.
- In a small bowl, combine salt, pepper, onion powder, garlic powder, paprika, and oregano. Sprinkle over broccoli, potatoes, and salmon.
- Place baking sheet with broccoli and potatoes in the oven and cook for 30 minutes.
- Lower heat to 350 degrees. Use a spatula to push the broccoli and potatoes to the side and place salmon on the baking sheet. Cook for an additional 15 minutes.
- Meanwhile, make the creamy dill sauce. In a small bowl, whisk together Greek yogurt, fresh dill, salt, milk, and parmesan cheese. Drizzle sauce over salmon, broccoli, and potatoes.
