Sheet Pan Salmon Dinner with Creamy Dill Sauce

Ingredients
  • 1 - ½ lbs. salmon, cut into fillets
  • 3 broccoli crowns, chopped into florets
  • 3 large Yukon gold potatoes, chopped into bite-sized pieces
  • ¼ cup olive oil
  • 2 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 2 tsp. onion powder
  • 2 tsp. garlic powder
  • 1 tsp. smoked paprika
  • 1 tsp. dried oregano
  • ½ cup plain Greek yogurt
  • 2 tbsp. fresh dill, finely chopped
  • ¼ tsp. salt
  • 2 tbsp. milk
  • ¼ cup finely grated Parmesan cheese.
Instructions
  1. Preheat oven to 400 degrees Fahrenheit and line a large rimmed baking sheet with aluminum foil. Spray with nonstick cooking spray. Spread broccoli and potatoes on the prepared baking sheet and place salmon on a separate plate.
  2. Drizzle olive oil over broccoli, potatoes, and salmon. Use your hands to make sure that everything is evenly coated.
  3. In a small bowl, combine salt, pepper, onion powder, garlic powder, paprika, and oregano. Sprinkle over broccoli, potatoes, and salmon.
  4. Place baking sheet with broccoli and potatoes in the oven and cook for 30 minutes.
  5. Lower heat to 350 degrees. Use a spatula to push the broccoli and potatoes to the side and place salmon on the baking sheet. Cook for an additional 15 minutes.
  6. Meanwhile, make the creamy dill sauce. In a small bowl, whisk together Greek yogurt, fresh dill, salt, milk, and parmesan cheese. Drizzle sauce over salmon, broccoli, and potatoes.
