It’s time for another sheet pan meal! Salmon is one of my favorite proteins to cook on a sheet pan because it has a quicker cooking time, making it easier for veggies to cook along with it. With a sheet pan chicken dinner, it requires a lot of testing and cutting vegetables the right way to make sure the chicken is cooked without being dry and that the vegetables are cooked as well. But salmon, salmon is perfect every time! I cook the salmon and broccoli together, and while this sheet pan lemon pepper salmon is perfect all on its own, but I like to serve it with some brown rice.
Lemon pepper is such a great seasoning for everything, and I think it’s gotten a reputation for being overrated. For good reason though! It’s great on just about everything and this sheet pan salmon is no exception. You could also substitute some roasted potatoes for the rice as a side and season them with olive oil and extra lemon pepper seasoning. I also highly recommend that you follow my pro tip of using any extra roasted broccoli for breakfast the next day. One of my favorite breakfasts is roasted vegetables topped with a couple fried eggs and some avocado. To speed up the breakfast process in the morning because all of my four kids expect breakfast the second they walk downstairs, I just roast extra vegetables any time I’m making them for dinner.
Just a few ingredients to make this easy sheet pan lemon pepper salmon for dinner! Don’t miss this easy weeknight meal.
- 1 lb. salmon, cut into filets
- 3-4 broccoli crowns, chopped into small florets
- 3-4 tbsp. olive oil
- 1½ tsp. salt
- 1 tsp. freshly ground black pepper
- 1½ tbsp. lemon zest
- 2 tsp. garlic powder
- 2 tsp. onion powder
- Juice of 1 lemon
- Cooked brown rice for serving, optional
- Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper or aluminum foil and spray with nonstick cooking spray.
- Arrange the salmon and broccoli on the pan and drizzle with olive oil. Use your hands to make sure everything is evenly coated.
- In a small bowl, mix together salt, pepper, lemon zest, garlic powder, and onion powder. Sprinkle evenly over the salmon and broccoli.
- Bake for 20-22 minutes until salmon is done.
- Squeeze lemon juice over the salmon and broccoli. Serve with brown rice, if desired
