Sheet Pan Lemon Pepper Salmon

Ingredients
  • 1 lb. salmon, cut into filets
  • 3-4 broccoli crowns, chopped into small florets
  • 3-4 tbsp. olive oil
  • 1½ tsp. salt
  • 1 tsp. freshly ground black pepper
  • 1½ tbsp. lemon zest
  • 2 tsp. garlic powder
  • 2 tsp. onion powder
  • Juice of 1 lemon
  • Cooked brown rice for serving, optional
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper or aluminum foil and spray with nonstick cooking spray.
  2. Arrange the salmon and broccoli on the pan and drizzle with olive oil. Use your hands to make sure everything is evenly coated.
  3. In a small bowl, mix together salt, pepper, lemon zest, garlic powder, and onion powder. Sprinkle evenly over the salmon and broccoli.
  4. Bake for 20-22 minutes until salmon is done.
  5. Squeeze lemon juice over the salmon and broccoli. Serve with brown rice, if desired
