A lot of people make New Years resolutions to eat healthier. Or maybe you have a more concrete resolution with a set end date, like a sugar-free or whole 30 January. Personally, I don’t set resolutions. My goal is to always live a healthy lifestyle in moderation. That means that while most weeks I exercise 5-6 days, I don’t beat myself up if I need some extra sleep one morning. It means that while I eat healthy most of the time, I eat the treats when I want them. It’s all about balance! And I can feel pretty balanced in this radicchio chopped salad. It is definitely a hearty, filling salad with its ingredient list, and it’s one that I plan to make again and again this year.
I really like having salad once a week for dinner because it’s both easy and healthy, and I consider that a double win. This radicchio chopped salad has salami and chickpeas in it for a protein punch, crumbled gorgonzola because you can’t go wrong with cheese, and sliced pepperoncini for some heat. A simple vinaigrette and juicy grape tomatoes make this a perfect salad. Radicchio does have a bit of an intense, slightly bitter taste, so if you don’t love it as much as I do, you can substitute half the radicchio for something green like arugula or chopped romaine.

- 1 head radicchio, chopped
- 1 can chickpeas, rinsed and drained
- ½ cup sliced pepperoncini
- ¼ cup chopped red onion
- 1 pint grape tomatoes, halved
- 4 oz. salami, chopped
- 4 oz. crumbled gorgonzola
- 4 tbsp. red wine vinegar
- 4 tbsp. olive oil
- ½ tsp. salt
- ¼ tsp. freshly ground black pepper
- 1 tbsp. lemon juice
- 1 tbsp. honey
- In a large bowl, toss together radicchio, chickpeas, pepperoncini, red onion, grape tomatoes, and salami.
- In a small bowl, whisk together red wine vinegar, olive oil, salt, pepper, lemon juice, and honey.
- Drizzle vinaigrette over salad and toss to combine.
- Top with crumbled gorgonzola and serve.
