Summer is the time for easy desserts, ideally topped with vanilla ice cream. Stone fruit or berries topped with a crisp or cobbler topping is the way to go! I am not someone who enjoys making pie crust, so when it comes to fruity desserts you can typically find me making crisps or cobblers. This pistachio peach crisp is so easy, gluten-free, and even dairy-free depending on what type of ice cream you use. Sounds like a dessert that’s healthy enough to be breakfast if you ask me!
Now I know that there are a lot of crisp recipes out there on the internet, but the pistachios in this one make it perfect. They add a little salt, a lot of crunch, and pair so well with the juicy peaches. Summer dessert at its finest right here!
The crumble topping on this is the best. I tend to prefer crisps over cobblers because I like the crispy topping. I always use oats in mine, and using almond flour instead of regular flour keeps it gluten-free while also adding some extra nuttiness. It compliments the pistachios really well. Using coconut oil instead of butter is a healthy switch you probably won’t even notice because this pistachio peach crisp is so tasty. And it has just the right amount of sweetness. I used brown sugar in this recipe but you can substitute coconut sugar if you want to keep it naturally sweetened. Don’t let peach season pass you by without enjoying this delicious recipe! - 5-6 peaches, sliced
- 1 lemon, juiced
- ¾ cup rolled oats
- ½ cup almond flour
- ¾ cup chopped pistachios
- ½ cup packed dark brown sugar
- ¼ tsp. salt
- ⅓ cup melted coconut oil
- Preheat oven to 350 degrees Fahrenheit. Place the peaches in an 8 x 8 baking dish. You can also use a slightly larger baking dish as well. Spread the peaches in the dish, drizzle with lemon juice, and gently stir to combine.
- In a medium bowl, whisk together oats, almond flour, pistachios, brown sugar, and salt. Pour coconut oil over the mixture and stir to combine.
- Spread oat mixture over peaches.
- Bake for 25-30 minutes until golden brown and bubbly.
- Serve warm with vanilla ice cream, if desired.
