Pistachio Peach Crisp

Ingredients
  • 5-6 peaches, sliced
  • 1 lemon, juiced
  • ¾ cup rolled oats
  • ½ cup almond flour
  • ¾ cup chopped pistachios
  • ½ cup packed dark brown sugar
  • ¼ tsp. salt
  • ⅓ cup melted coconut oil
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Place the peaches in an 8 x 8 baking dish. You can also use a slightly larger baking dish as well. Spread the peaches in the dish, drizzle with lemon juice, and gently stir to combine.
  2. In a medium bowl, whisk together oats, almond flour, pistachios, brown sugar, and salt. Pour coconut oil over the mixture and stir to combine.
  3. Spread oat mixture over peaches.
  4. Bake for 25-30 minutes until golden brown and bubbly.
  5. Serve warm with vanilla ice cream, if desired.
