Preheat oven to 350 degrees Fahrenheit. Place the peaches in an 8 x 8 baking dish. You can also use a slightly larger baking dish as well. Spread the peaches in the dish, drizzle with lemon juice, and gently stir to combine.
In a medium bowl, whisk together oats, almond flour, pistachios, brown sugar, and salt. Pour coconut oil over the mixture and stir to combine.
Spread oat mixture over peaches.
Bake for 25-30 minutes until golden brown and bubbly.
Serve warm with vanilla ice cream, if desired.
