At almost 23 weeks pregnant with our fourth baby, I won’t be drinking any alcoholic beverages this summer. My two summer favorites are typically margaritas and Moscow mules, but for now I am sticking to sparkling water until this baby joins our family in September. Not every cocktail is delicious if you simply omit alcohol and call in a mocktail. Sometimes, you need something else to make it a truly delicious mocktail. I kept this pina colada mocktail simple, but it would also be delicious with alcohol added if you chose to do that.
There’s no need to overcomplicate mocktails! I just wanted this one to be a little sweet, a little sour, and a little bubbly. Just three ingredients helps us make that happen: pineapple juice, lime juice, and coconut sparkling water. A sugared rim and pretty garnish make you feel a little extra fancy and you can go ahead an indulge in this summer mocktail even if you don’t drink alcohol. I plan to make a big pitcher of this to enjoy for summer BBQs and gatherings and serve alcohol alongside it for anyone who wants to add it. Tequila, vodka, or white rum would all be great choices for alcohols to add. Tequila would give you a margarita vibe and rum would make this taste more like a traditional pina colada, plus you can’t go wrong with vodka.
If you like your drinks on the sweeter side, you can add a splash of grenadine to this drink as well. I left it out, but grenadine is also a pretty addition if you happen to have it on hand and want something on the sweeter side! I let my boys taste this mocktail and they liked the sweet (and colorful) addition of grenadine but it is completely optional. You can’t go wrong with this pina colada mocktail, and I think it’s a great idea to have a non-alcoholic option on hand when you’re entertaining.
- 1½ cups pineapple juice
- Juice of 1 lime
- 1 can coconut sparkling water (I use La Croix brand)
- Grenadine (optional)
- Lime wedges, pineapple slices, and maraschino cherries for garnish (optional)
- 4 cups pineapple juice
- Juice of 2 limes
- 2 cans coconut sparkling water
- Grenadine (optional)
- Lime wedges, pineapple slices, and maraschino cherries for garnish (optional)
- For two mocktails: using a shaker or a large glass with a spoon, combine pineapple juice and lime juice.
- Pour into two glasses over ice and top with coconut sparkling water.
- Add a splash of grenadine if using. Serve with your desired garnish and enjoy!
- For a large pitcher: Pour 4 cups of pineapple juice and the juice of two limes into a large pitcher. Add two cans of coconut sparkling water and carefully stir to combine. Add a splash of grenadine if using and stir again. Serve with glasses of ice and desired garnish.
