I love making bread. Our overcast, cool days are frequent here in the Pacific Northwest, and something about baking a yeasty bread just seems so cozy. Plus the smell of a yeast bread is just fantastic. I have a stand mixer so the kneading part is pretty easy, but I’ve been intrigued by no-knead breads because they see impossibly easy. This whole wheat rosemary skillet bread is really everything you want in a bread.
This bread passes my number one bread test, which is enjoying it warm with butter and a sprinkle of sea salt. My other bread tests are dunkability in soup and sandwich making capabilities. I can’t think of a soup that this wouldn’t be delicious with, and it slices well without being too crumbly which makes it perfect for sandwiches.
Since this skillet bread has just minutes of hands-on time, it’s pretty perfect. But it does require a bit of planning because you need to let it rest for 12-18 hours. That seems crazy, I know, but the yeast works it’s magic and you end up with a delicious and yummy bread.
If you’ve got 5 minutes, you can make this bread. Easy, delicious, and full of rosemary flavor.
- 1 cup all-purpose flour
- 2 cups whole wheat flour
- 1 tsp. sugar
- 1½ tsp. salt
- 2 tsp. instant yeast
- 2 tbsp. finely chopped fresh rosemary
- 1½ cups warm water
- In a large bowl, whisk together both flours, sugar, salt, yeast, and rosemary.
- Add warm water and stir until just combined.
- Cover bowl with plastic wrap and let sit for 12-18 hours. Don't stir it, don't worry about it! Just let it rest.
- After the dough has rested, preheat the oven to 425 degrees Fahrenheit. Place your Dutch oven in the oven to warm up, about 20-30 minutes. Remove and line the Dutch oven with parchment paper.
- Gently remove the dough from the bowl and shape into a circle. You don't want to lose the air pockets that the dough has formed, and you don't want to knead it. Just gently shape and place in the Dutch oven. Bake covered for 30 minutes, then remove the lid and bake for another 10-15 minutes until golden brown.
- Remove from Dutch oven and enjoy!
