I love having a healthy, quick grab-and-go snack ready to go at all times. Whether for myself, husband, or the kids, sometimes you just need a little something. Especially being pregnant and with a year of nursing around the corning, I know I’ll need some snack options on hand! I absolutely love my chocolate brownie energy bites, but wanted to go a different route and make these monster cookie energy bites. Made with peanut butter, honey, flaxseed meal, oats, chia seeds, hemp hearts, shredded coconut, and vanilla extract along with your favorite mix-ins, they’re like a healthy energy-packed cookie for you to enjoy anytime. I mixed in mini M&Ms, but you could also use mini chocolate chips, chopped peanuts, and/or raisins.
You can mix together all of these ingredients in a single bowl, but I like to use a food processor to help break up the oats and coconut and incorporate the monster cookie energy bites a little more quickly. If you don’t have a food processor, using a bowl works fine! I like to mix the dry ingredients together first, whether I use a food processor or a bowl, to make sure the ingredients are evenly incorporated. Your dry ingredients in this easy energy bite recipe are rolled (old-fashioned) oats, flaxseed meal, chia seeds, hemp hearts, and shredded coconut. Your mix-ins are also a dry ingredient but we are going to add those at the end! After mixing together your dry ingredients, add the natural peanut butter, honey, and vanilla extract. After mixing these together, finally add your mix-ins of choice.
It can be easy to want to go overboard with the mix-ins but if you add too many, you won’t be able to form the energy bites into balls very well. If you want to add more of the mix-ins, double up on all the other ingredients. These energy bites keep well in the refrigerator for over a week (if they last that long), so feel free to make a double batch!
- ¾ cup rolled or old-fashioned oats
- ¼ cup flaxseed meal
- 2 tbsp. chia seeds
- 2 tbsp. hemp hearts
- ¼ cup shredded coconut
- ½ cup natural peanut butter
- ¼ cup honey
- 1 tsp. vanilla extract
- ½ cup mix-ins of choice (mini M&Ms, mini chocolate chips, chopped peanuts, or raisins)
- In a large bowl or a food processor, combine oats, flaxseed meal, chia seeds, hemp hearts, and coconut. I prefer to use a food processor for this recipe and pulse the dry ingredients until they're in smaller pieces. You can also use a bowl if you don't have a food processor!
- Add the peanut butter, honey, and vanilla and mix until combined. Use the same bowl or food processor for this step.
- Transfer the mixture to a bowl if you have been using a food processor up to this point, then add your mix-ins and mix until combined.
- Form the energy bites into balls and place in an airtight container to keep in the refrigerator.
- Energy bites are good for a week or more in the refrigerator.
