I got these cute new little mini tart pans recently and I absolutely love them! I love that everyone can have their own personal little tart. While I love a good dessert tart, I wanted to make something that’s appropriate for breakfast. The crust on these tarts is made from oats and almond flour, and they’re naturally sweetened! You can fill them with Greek yogurt and whatever kind of fruit you want. Sounds like a perfect breakfast to me.
These tarts are delicous filled with berries like I did here, but once stone fruit season is here I bet they’ll be delicious topped with peaches or plums! Really, you can’t go wrong with this. I used unsweetened plain Greek yogurt as a filling, but you can use whatever flavor you prefer.
They’re adorable, healthy, and delicous; these tarts are perfect for brunch or to serve at any bridal or baby showers you have this summer. My boys loved these because they each got their own little tart for breakfast! Talk about a perfect start to the day.
- 1½ cups rolled oats
- 1 cup almond flour
- ½ cup honey
- ¼ tsp. salt
- ¼ cup brown sugar
- 4 tbsp. oil
- Greek yogurt
- Fresh fruit for topping
- Preheat oven to 350 degrees Fahrenheit.
- In a medium bowl, combine oats, almond flour, honey, salt, brown sugar, and oil.
- Spray 6 mini tart pans with nonstick cooking spray.
- Press the prepared filling into each tart pan, ensuring the crust is pushed up the sides.
- Bake for 15 minutes until golden brown.
- When you remove them from the oven, the tart shells will have puffed up a bit. Push the centers down with a spoon to ensure you have a well for the yogurt.
- Once the shells are completely cool, remove from pans, fill with yogurt, and top with berries.
- Enjoy!
