Oatmeal Breakfast Tarts

Ingredients
  • 1½ cups rolled oats
  • 1 cup almond flour
  • ½ cup honey
  • ¼ tsp. salt
  • ¼ cup brown sugar
  • 4 tbsp. oil
  • Greek yogurt
  • Fresh fruit for topping
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine oats, almond flour, honey, salt, brown sugar, and oil.
  3. Spray 6 mini tart pans with nonstick cooking spray.
  4. Press the prepared filling into each tart pan, ensuring the crust is pushed up the sides.
  5. Bake for 15 minutes until golden brown.
  6. When you remove them from the oven, the tart shells will have puffed up a bit. Push the centers down with a spoon to ensure you have a well for the yogurt.
  7. Once the shells are completely cool, remove from pans, fill with yogurt, and top with berries.
  8. Enjoy!
