Have you ever planted mint in your garden? It’s an herb that grows really well, but sometimes a little too well. It’s hardy, requires little maintenance, and grows into a huge bush. In fact, if you don’t plant it in its own pot, it can spread and take over your garden! But what can you do with all that fresh mint? It’s delicious added to water or iced tea, and of course you can use it in mojitos, but I wanted to create another recipe that used mint. Using fresh mint in this lemon mint bread gives you a treat that’s perfect for dessert, breakfast, or a snack with an afternoon cup of tea.
Does anyone else have an afternoon cup of tea? Frequently my afternoons are filled with recipe testing and photography, photo editing, and keeping up with cleaning and laundry. The afternoons are naps/quiet time for my kids and I take full advantage! But I try to schedule my weeks so that Friday afternoons are for relaxing. I may do a bit of computer work, but I love to sit down with a cup of tea and a little treat as my time to relax between a busy week of adventures with the kids and a weekend of family fun.
Lemon mint bread would pair perfectly with tea or coffee, but is also a nice sweet treat to enjoy as a summer dessert. Even though Labor Day “unofficially” kicks off fall, we still have a few more weeks of summer. And if you have mint in your garden, you definitely have more than a few weeks of it growing. Plenty of time to enjoy this lemon mint bread!
As a huge bonus, this bread is so easy to whip up and smells amazing as it bakes. I hope you enjoy it as much as we do!
- 2 cups all-purpose flour
- ½ tbsp.. baking powder
- ½ tsp. baking soda
- ½ tsp. salt
- ¾ cup sugar
- ¼ cup finely chopped fresh mint
- ¾ cup plain Greek yogurt
- ½ cup oil
- 2 eggs
- ½ tsp. lemon extract
- ½ tsp. vanilla extract
- 3 tbsp. lemon zest
- 3 tbsp. milk
- 3 tbsp. lemon juice
- 1½ cups powdered sugar
- 2-3 tbsp. lemon juice
- Preheat oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick cooking spray and line with parchment paper for easy removal.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a small bowl, combine sugar and fresh mint. Use a wooden spoon or mortar and pestle to mix the sugar and mint together. You want to use a little force to infuse the sugar with mint flavor.
- In a large bowl with a hand mixer or a stand mixer, combine sugar and mint mixture, Greek yogurt, and oil. Mix until smooth. Add eggs, one at a time, mixing well after each addition.
- Add lemon extract, vanilla extract, lemon zest, milk, and lemon juice. Mix until smooth.
- Add dry ingredients to wet ingredients and mix until just combined.
- Pour batter into prepared pan and bake for 50-55 minutes until a toothpick inserted into the center comes out clean. Remove from pan and transfer to a wire rack to cool completely.
- Whisk together powdered sugar and 2 tbsp. of lemon juice. Add remaining tbsp. of lemon juice only if needed for a thinner consistency.
- Drizzle glaze over bread.
- Enjoy!
