Lemon Mint Bread

Ingredients
Bread
  • 2 cups all-purpose flour
  • ½ tbsp.. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
  • ¾ cup sugar
  • ¼ cup finely chopped fresh mint
  • ¾ cup plain Greek yogurt
  • ½ cup oil
  • 2 eggs
  • ½ tsp. lemon extract
  • ½ tsp. vanilla extract
  • 3 tbsp. lemon zest
  • 3 tbsp. milk
  • 3 tbsp. lemon juice
Glaze
  • 1½ cups powdered sugar
  • 2-3 tbsp. lemon juice
Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Spray a loaf pan with nonstick cooking spray and line with parchment paper for easy removal.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a small bowl, combine sugar and fresh mint. Use a wooden spoon or mortar and pestle to mix the sugar and mint together. You want to use a little force to infuse the sugar with mint flavor.
  4. In a large bowl with a hand mixer or a stand mixer, combine sugar and mint mixture, Greek yogurt, and oil. Mix until smooth. Add eggs, one at a time, mixing well after each addition.
  5. Add lemon extract, vanilla extract, lemon zest, milk, and lemon juice. Mix until smooth.
  6. Add dry ingredients to wet ingredients and mix until just combined.
  7. Pour batter into prepared pan and bake for 50-55 minutes until a toothpick inserted into the center comes out clean. Remove from pan and transfer to a wire rack to cool completely.
  8. Whisk together powdered sugar and 2 tbsp. of lemon juice. Add remaining tbsp. of lemon juice only if needed for a thinner consistency.
  9. Drizzle glaze over bread.
  10. Enjoy!
