I’m so excited to be sharing my first new Thanksgiving recipe of the year! Even though I’ve shared lots of Thanksgiving recipes on the blog, I never seem to run out of ideas when it comes to the holidays. Last year our Thanksgiving was really low-key because Juliette was only a month old, but this year we are hosting my in-laws! It’s their first time being here for a holiday and I’m happy to give my mother-in-law time off from her hosting duties. Personally, I love hosting dinners, but I know that it’s not for everyone. If you do get stressed out over entertaining for Thanksgiving, I recommend that you pick the easiest way to prepare side dishes, like this instant pot cheesy cauliflower mash.
Let me share a little secret about holiday entertaining: a lot of dishes can be made in advance. In fact, the only thing that I make on Thanksgiving itself is the turkey and the gravy. The day before Thanksgiving is usually really busy for me, but that means on the holiday itself I can relax and just enjoy time with my family. With a side dish as easy as this though, it’s certainly something that you can make the day of. It takes a few minutes to throw everything in the instant pot and just FOUR minutes to cook. I use both cauliflower and potatoes in this side dish, and plenty of cheese to balance it all out. And since the instant pot has a “warm” setting, that makes it easy to make when you have a minute in between basting the turkey and it’ll be delicious and ready to go when the rest of dinner is ready too.
Instant pot cheesy cauliflower mash may not be a dish that’s made it on your Thanksgiving table before, but I promise that it’ll be a welcome addition to the feast. Keep your holiday entertaining easy with this quick and delicious side dish!
- 1 small head cauliflower, cut into florets
- 2 lbs. Yukon gold potatoes, peeled and cut into large chunks
- 1 cup chicken or vegetable broth
- 3 tbsp. butter
- 1 tsp. salt
- ½ tsp. freshly ground black pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- ¾ cup shredded cheddar cheese
- ¼ cup shredded parmesan cheese
- Fresh chives for topping, optional
- To your instant pot, add cauliflower, potatoes, broth, butter, salt, pepper, garlic powder, and onion powder.
- Place the lid on the instant pot and ensure it's sealed. Set to high pressure for 4 minutes.
- Once its done cooking, manually release the pressure.
- Use a potato masher to mash the cauliflower and potatoes. They should be very tender and this should not take long! If you want them to be really smooth, you can use a hand mixer.
- Stir in the cheddar and parmesan cheeses.
- Serve topped with snipped chives.
